Step-by-Step Method
Preparation (Frencing): Clean the chicken winglets, remove skin, and use a knife to push the meat down to one end to create a lollipop shape.
First Marinade: Mix the chicken with ginger-garlic paste, chili sauce, soy sauce, vinegar, and salt. Let it rest for 30 minutes to an hour.
Second Marinade (Batter): Add corn flour, refined flour (maida), rice flour, and an egg to the marinated chicken to make a thick coating.
Frying: Deep fry the chicken in hot oil over medium heat until golden brown and cooked through.
Sauce & Serving: Sauté ginger, garlic, and green chilies in a pan. Add soy sauce, chili sauce, and ketchup. Mix in a little water mixed with cornflour (slurry) to thicken, then toss the fried lollipops in this sauce.
